Default OT- something for a winter day

After I put this in the oven I have time to cross stitch ;-0
Don't remember where I got the recipe. You can use 1 egg for two pieces
of chicken .Not feeding a large family anymore.You also need a cast iron
skillet for this recipe.

Oven Fried chicken
(cook your chicken in the same skillet(oven prof) your going to put in
the oven)
2 or 3 eggs
1 frying chicken,cut up(or chicken breasts)
salt and paprika
all -purpose flour (maybe 1/4 cup)(you can also use breadcrumbs with the
flour Mixed)((you can also add more paprika to the flour also)
shortening(maybe 2T)

Beat the eggs over the chicken,add salt and paprika,and coat the chicken
pieces very well.mixing by hand.Then roll chicken in the flour.
Then melt shortening in skillet.Heating until very hot.
Then place chicken in the very hot shortening.(Maybe 4 min on each side)

Then take the skillet and chicken (when all pieces are cooked in
shortening)and place in a 400*F oven for about 30 min or 1 hour
depending on the sizes of your pieces(and how your oven temp runs).Until
golden brown.
Be sure to turn your chicken a few times during baking.
Serve with your side and enjoy
The chicken is not greasy in anyway.
