Well - we relied on Aunt Lear (yes that was her real name) for head cheese.
It is definitely an acquired taste. The best description/recipe I ever saw
was in the book "Centennial" by Michener. It followed the exact method that
Aunt Lear used. She died at age 90 something. Her house had electric but
she still had a "house out back" and a "hand pump at the well." when she
passed. Her grandchildren forced the electricity in the house on her. She
complained that she "never needed it before - don't need it now". She grew
a garden and canned everything in it right up until she died. She lived in
the same house her husband brought her to as a bride. It had 3 rooms and a
"lean-to" kitchen off the back with a big black wood cook stove in the
center. She raised a beef, pigs and chickens and had a milk cow. She
bought white flour, yellow cornmeal and sugar in bulk and bought little else
at the local mercantile. She said she used everything on the pig but his
squeal to make head cheese. LOL!! I adored and worshipped her. She and
her husband never had children of their own. She sang alto with my mother
as soprano in a mixed country bluegrass gospel quartet. They used to do
live radio broadcasts on Sunday morning. Her husband - "red" Otis sang lead
and Mitch Nofire sang Bass. Some of the most beautiful music you ever
heard. None of them could read music and sang by "ear" - mostly
unaccompanied by musical instrument. Once in awhile if Uncle Shorty wasn't
too hung over from imbibing too much moonshine the night before, he would
play his "juice-harp" or his harmonica. On rare occasion, Reverend Kester's
wife would play piano. Daddy could play spoons for the rhythm section - if
you begged him real pretty.

Well, there's the older word to describe it too... Aspic. Like calves
tongue in aspic. And because that is the recipe I think of when I hear
the word "aspic" I cannot find it appealing. I also know that it's
because of the gelled broth from the animal that it is created thus...
and yeah, I'm too queasy to contemplate it.

Pass the vulture vomit, please.

I never heard of pistachio pudding cake before. Sounds yummy. What
do you use for icing? Maybe you could post a recipe for us pistachio
pudding lovers.

1 can of crushed pineapple, including juice (the smaller size tin)
Add/fold in
1 small tub of Cool Whip
Refrigerate

My family loves it and it's quick and easy. I took it to a pot luck one
time and a lady went back for seconds for more of that "Yucky Green Salad"
