Bummed!
I just made my bananna bread recipe and was starting some chocolate chip
cookies when I realized I used cornstarch instead of baking soda in my bread!!!! Boo hoo! I'm starting to make a lot of goofups when cooking. I just don't pay attention....I was watching the Wimbledon final at the same time. Darn it. Both my corn starch and baking soda are in boxes, so I just grabbed the box and started measuring. Dummy! The bread looks a little funky, but maybe it won't taste too bad. Geez. Depending on how much was needed in the recipe, the eggs alone may suffice. Don't worry about the added cornstarch. Cornstarch is actually the main ingredient in baking powder. If the banana bread doesn't rise enough you can always use it in a banana bread pudding. VBG |

They are pretty dense. They don't taste "too" bad. And they didn't brown
on top very well. Oh well. My oven temp is pretty undependable, too. My first batch of cookies are very underdone. The second batch is ok since I baked them longer than the receipe. I give up. I recently had the bright idea of using baby food jars of banana when
finding ripe bananas was impossible. DH predicted the results would be gross but he scraped the cake pan to put the final crumbs on some ice cream. It would be safe to say the substitution was just fine. I was just glad he didn't eat the cake pan. Polly "IMS" wrote in message ... Cinnamon is standard in almost everything I cook/bake!!! Last time I
made meatloaf I used a bit of cinnamon in it, and DH never did guess the "secret ingredient" ) And, peanut butter is also a fun thing to add to all kinds of different homemade goodies!! And Polly, i take bananas that aren't quite ripe, peel them , chunk them into a glass measuring cup, and microwave them for about a minute. Voila! softened 'nanners ready for baking.....
