I have, when teaching very young children to hand sew, knotted the thread at
both ends. One knot is against the eye of the needle and the other is
embedded in the fabric.
The knot at the eye passes through the fabric easily but stops the thread
pulling through the needle. This prevents a lot of the frustration that
children experience when they keep pulling the needle of the
thread......Amelia

keeps the thread in the needle eye

Three is another way to 'lock' the thread end, a tailor's
finishing: take three or four small back-stitches into the cloth, then
proceed with your hand-stitching. Works as well as a knot.
This is a finishing method I sometimes use on special garments,
light, delicate items, or any area where machine back stitching would
be bulky or obvious: Step 1: I stitch with the machine, leave a long
thread tail at the end of the line of stitching: Step 2: thread a
hand-needle with the thread tail, work the thread to the back of the
fabric and make several small back-stitches. Not much extra work, and a
fine technique.

True but the OP wasn't asking about that yet I rarely use knots
either.....
