What is the best fabric to stitch on for this and what count? I have a lot of
Edinborough which I think is 28- correct me if I am wrong-- will that work?

Edinburgh is 36 ct. The best fabric is the one that you like which will make
the design the size that you want.

Great glad to hear it and yes 36 count! I forgot! I am sure that will work
then. I was fearing that you all used a special "blackwork cloth" or somthing.
Thanks for the help!

I'd heard that the working thread should be about the same size as the
threads of the fabric, so, any combination of thread & fabric like that,
with which you're comfortable, should be considered as "correct" for
you. I once saw a Holbein panting in a museum, up close. If it was an
accurate illustration of fashion, there's no reason to limit oneself to
28-count or even 36-count, if you're comfortable stitching on finer.

I've tried with finer threads on 24-36 count and it may be "pretty", but
it doesn't look quite right, somehow. I've tried with thicker working
theads, going over 2 or over 4 or even over 6 threads of the ground
fabric and the stitches just looked gross, compared to over-2 with the
working thread about the same as the ground fabric's thread.

Oh thank you ever so much Diane for the help. I am sure I will figure this out
eventually but you saved me heaps of time. At this age I am rather tired of
learning the hard way and research at least a little first now before jumping
in the pool!

I've tried with thicker working

If you mean Edinburgh by Zweigart, it is 36 count. Their Belfast is 32 count.
Since you are not concerned about really good coverage why don't you try a
small design on a corner of your fabric and see if you like the look that you
have. I have done several things in blackwork and have used 32 count. The
count depends on what you like and the size you want the finished needlework to
be. If you have any doubts about the count, just measure an inch and count the
threads in that inch. Boo
