The recipe isn't really mine to share, it belongs to Ghirardelli. =)


Ghirardelli Classic Blondies:

2 bars (8oz) Ghir. white chocolate baking bars (I use 2C white
chocolate chips)

1/2 C unsalted butter

2 eggs

1/3 C sugar

1 T vanilla

1 1/4 C flour

3/4 t salt

1 C Ghir. milk chocolate chips

Preheat oven to 350. Line 9x9 baking pan with waxed paper, then grease
the paper. (I've also used parchment paper with good results)

Cut white chocolate and butter into small pieces. In double boiler,
melt white chocolate and butter. Stir until smooth, and then set aside.


In separate bowl, beat eggs until foamy. Slowly add sugar while mixer
is running. Add vanilla. In a thin stream, add white choc/butter
mixture. By hand, fold in flour, salt, and chocolate chips. Spoon into
prepared pan.

Bake 25 mins, until tester inserted in center comes out clean.

If you're careful, you can lift the whole thing out of the pan by
holding the waxed paper just right. I usually make a double batch, in a
9x13 pan, and the timing then is more like 30-35 minutes. I like how
the centers come out... almost like fudge!

I don't know what all this "blondies have no chocolate" is about ...
even if we get past the whole "is white chocolate really chocolate"
bit, every blondie recipe I've heard has chocolate chips. YMMV, of
course.
