Default Wood for carvers

We supply wood for turners mostly but have had requests from carvers. We do
supply Cottonwood bark in chunks and sheets but other than that its just
many types of wood including a lot of spalted and burl. What spacific
needs do carvers have and what are the best dementions for perhaps what
type of wood green or dry? Thank you
