OT -- Taco Casserole
Okie dokie ... here goes!
Easy Taco Casserole (serves 6) 1-1/2 - 2 lbs ground beef or ground chuck 1 pkg. Old El Paso Taco Seasoning Mix 1/4 Cup water One 16-oz can Old El Paso refried beans (or whatever brand) 8-10 Taco shells or tostada shells (crunchier) broken 2-3 cups Shredded Cheddar cheese 1 16-oz. jar Salsa 1. Heat oven to 375 degrees. 2. Brown ground beef in large skillet over medium high heat until beef is thoroughly cooked; drain. Reduce heat to medium and stir in taco seasoning and water. Simmer for about 2 minutes or so. 3. Pour hamburger/taco seasoning mixture into bottom of large oven safe casserole dish. Layer refried beans, half of the broken taco shells, 1 cup cheese and salsa on top of beef. Top w/remaining broken shells and cheese. 4. Cook in oven until edge of cheese/shells are golden brown, about 20-25 minutes. Wonderful served with a salad -- ENJOY! Jennifer / Poetta www.LadybugLane.com |

Thanks .... we love it too and it's very quick to fix. My stepchildren
ask for it everytime they come over! I think the worst part of living in ME was the dearth of good ethinic restaurants. I always like trying stuff other than "American" food, especially Mexican, Asian, and all Oriental. But most of the Mexican and Chinese restaurants I tried in ME were yankeeized (my word G) and very bland. A good Chinese restaurant, The First Wok, finally opened in Augusta and my ex and I became well-known regulars. If I could only figure out how to make that Hot and Sour Seafood Soup; that was delicious! DH also loves all kinds of different types of food and is very good at making just about anything he tries. A lot of the time he'll look at a recipe and then do it the way he thinks is best, and that always works out great. Happy to have such a DSH, Suze |
