I've done a couple of relief and some in-the-round carvings in cherry
and I really like it. I'm currently planning a 20x24 inch relief
carving in some cherry that I recently obtained.

Cherry is a fairly hard wood that holds great detail, though it does
tend to splinter a little. You will need decent tools and they will
need to be very sharp. Dull tools greatly increase the risk of
splintering.
