Default OT - cooking question

Is evaporated milk sweet all by itself? And if so, how sweet is it? Would
a can of it be good in a pot of chicken stew?

No, that's condensed milk. http://en.wikipedia.org/wiki/Evaporated_milk

Sounds like that would be cream of chicken stew.

Evaporated milk isn't usually sweetened, but check on the can: anything
added should be listed. Condensed milk usually *is* sweetened.

I always add a can to my crockpot chicken stew at the end of the cooking
time along with some melted cheddar or Velveeta. As long as it isn't the
'sweetened condensed' milk it's fine.

iirc, when something is evaporated that condenses it.
so evaporated should be the same as condensed.
that said, do read the label closely as there is also sweetened condensed
milk.
that is ewwwwwwwwwww imo.

i use regular evaporated when making pumpkin pies, fwiw.
even my two kids who've left home love making those.
my ds even got one of his good buddys liking it so much he's now making
pumpkin pies for any excuse/party. soon we'll have nz a nation of pumpkin
pie eaters too.
hell pumpkin is a staple winter vegetable here. they already make all other
manner of concoctions from it why not pies too. just taking a bit of
education on the joys of it.
and lashings of fresh whipped cream.

Oh, yum, I'd say it would be good! I use evaporated milk in savoury cooking
all the time. It does add a touch of sweetness - I usually add a bit of
lemon juice if I want to tone it down a little.

No, evaporated milk is just milk with some of the water out. It makes a good
cream soup or milk gravy. Condensed milk is the one that is sweet- think
evaporated milk + syrup. You can cook it into a caramel.

Default OT - cooking question

I saw something on the food network this week. Evaporated milk has no
sugar added but can taste slightly sweet because the lactose (milk
sugar found naturally in milk) has been concentrated. It is handy to
have on hand in case you run out of milk and need some to cook with.
It can even be whipped like cream if it is very cold.

Sweetened condensed milk, on the other hand, definitely has sugar
added.

I use evaporated milk all the time. I like it for mashed taters better than
anything - and you can get it in skim. I love it because I never have to
worry about having milk on hand and the shelf life is loooooooooong. You
may be thinking of sweetened evaporated milk like you use to make candy and
pie, maybe???

Default OT - cooking question

Had a roommate who would open a can of condensed milk and eat it with a
spoon...but then again, he ate whip cream (or is that whipped cream?)
like it was ice cream, straight out of the container.

Tigg (thinking either would be too sweet and too icky by themselves,
although I will lick the spoon from the whip(ped) cream when having
pumpkin pie, which Jeanne has me wanting all of a sudden. )
