Warp Drive Chocolate Pie
You asked for it:
Chocolate Soufflé (no matter what you've heard, its not that tough) 1 tablespoon softened butter 3/4 cup sugar 1/2 cup espresso 6 oz. semisweet chocolate chips (half a bag) 1/2 cup heavy cream 6 eggs 1 tablespoon Kalua, Brandy or Grand Marnier 12 oz. quark Preheat oven to 375 F. Rub 6-cup soufflé pan with the butter and sprinkle in 1/4 cup of the sugar. Rotate the pan to coat it with the sugar and dump out the excess. Put the remaining 1/2 cup of sugar, chocolate and espresso together in a small saucepan and melt over low heat, stirring to combine. Remove and cool slightly. Blend the eggs, cream and brandy in a blender. Continue to run the blender on low and add the chocolate mixture, spoon in the quark and continue to blend for 30 seconds. Pour into the prepared soufflé pan. Bake 50 to 60 minutes at 375F. Frank Reid |
