Hi I`m in Yorkshire in the Uk and use english walnut most of the time. Lime and Pear are very good (soft) hardwoods with close grain. They tend to carve like butter and you get really fine detail with either I use mallet and chisel and not knives so I cannot advise you on how hard you have to...
